Wash the fish. I baked headless but here’s everyone’s choice. Make a deep cross section on one side of the carcass and place in them with butter, mixed with herbs and garlic, seasoned with salt and pepper. Place lemon slices inside the fish.
Lay fish in a hot pan, add tomatoes, clementine, cloves of unpeeled garlic.
Bake with lid closed until first side of the fish is well cooked. Roll and fry again, now without a lid.
Sprinkle with lemon juice. Served with rice or potatoes.
Tip: Dorada sometimes can have a strange smell and taste. This can be removed. Fresh cleaned fish rub in salt, hold for 5 minutes and rinse under cold running water.
